Dulce de leche cheesecake *

Hi everyone, september is here !! Get ready for fresh starts with enthusiasm, I'm gonna share new recipes with you, so don't forget to catch up with my posts.. Today is sunday, we all love sundays and we can always make it better with a delicious cake shared with friends and family, so why don't you get up and start making this yammy dulce de leche cheesecake <3

   


















For the crust :

  • 250 gr. cookies
  • 100 gr. walnuts
  • 150 gr. butter
For the cheesecake:

  • 250 gr. cream cheese
  • 60 gr. sugar powder
  • 1 pack of vanilla
  • 200 gr. heavy cream (35%)
  • 250 ml. dulce de leche
Preparation:

Preheat oven to 180ºC. Blend crackers and walnuts until finely grounded, then stir in melted butter. Put this cracker crumbs in the bottom of the springform pan. Gently press down on the crumbs using your fingers, until the crumbs are a nice even layer at the bottom of the pan then place in the oven for 10 minutes. Remove from oven and let it cool.

In a medium bowl beat the cream cheese and sugar powder until smooth. Add vanilla pack. In a different bowl blend heavy cream until incorporated and gently add to the cheese mixture.

Pour the cream cheese filling into the springform pan, over the cracker bottom layer and smooth the top. Cool in the fridge for 3 hours. When the cheesecake is cooled, warm the dulce de leche over low heat, stirring until smooth. Spread the dulce de leche topping over the cheesecake and cool again at least 4 hours or overnight. You can also sprinkle cake with chopped walnuts. Have a nice weekend everyone.

Ultimate chocolate brownie with ice-cream topping

Hello my friends ! Today I made the best chocolate brownie, it's soft and the ice-cream melts with chocolate and walnuts on the top <3 So it's Saturday, one of my favorite day of the week, when all the friends and family gather and have long talks with delicious meals <3 If you spend weekends like I do this chocolate brownie will totally meet your expectations :))

Ingredients:

  • butter 180 gr.
  • dark chocolate 180 gr.
  • 4 eggs
  • 250 gr. sugar
  • 100-110 gr. flour
  • pinch of salt
  • 1 pack vanilla


Preparation:

Melt chocolate and butter in the double boiler, in a bowl beat sugar and eggs, add vanilla, stir in chocolate mixture and in the end add flour with pinch of salt. Grease the baking pan, cover with chopped walnuts and pour the mixture. Bake at 180 C, about 25 minutes, cool it for 5 minutes, dress with ice-cream. <3

Cake with coffee cream, condensed milk and walnuts

Hello my friends ! Today I'm gonna share with you my new cake recipe which i made for my best friend.. Let's face it, a good creamy cake makes a lot of happiness ))) If i ever feel angry or sad, just one bite of sweetness can change it.. Yeah it does have lots of calories but it is so good, trust me its worth it )))) So get ready to bake it )


Ingredients:

Pastry:
  • eggs 5
  • sugar 2 cups
  • flour 2 cups
  • vanilla 1 pack
  • cocoa 1 tbsp.







Coffee cream:
  • milk 0.5 L.
  • butter 100-150 gr.
  • coffee 2 tbsp
  • eggs 3
  • flour 3-4 tbsp.
  • sugar 2 cups
  • vanilla 1 pack

Condensed milk cream:
  • condensed milk 1 jar
  • butter 100-150 gr.
  • vanilla 1 tsp.


Preparation:

Firstly let's boil condensed milk, put a jar into a boiler and boil it for 2-3 hours. then cool it and mix with butter and vanilla. Refrigerate it until the cake is baked.
Now we can make pastry. Preheat oven to 180 C. Grease baking pan with butter.In a bowl beat eggs and sugar with mixer, add flour, vanilla and cocoa, pour into the baking pan and bake for 30-40 minutes. Then cool it and wait until cream is done.
Pour hot milk into a boiler add coffee and leave it for 15 minutes covered. Meanwhile beat in eggs with sugar and flour in a bowl with mixer, stir in vanilla and gently add milky coffee. Cook it over a medium heat about 15 minutes, then cool it. Mix butter in a bowl and add cooled cream.
Slice the cake evenly moisten both of them with rum and coffee mixture, Cover one half of cake with cream and roasted walnuts, put another half on the top and pour condensed milk, bon appetie <3

Pupkin cookies with apple jam and walnuts

Hello my friends ! Today I baked a very delicious pumpkin cookies.. There is nothing better than cookies with jam in a cozy weather and of course hot tea ))) So this cookies are tasty and healthy as well. We all know about pumpkin benefits right ? Pumpkins are extremely nutrient dense food, it's full of vitamins and minerals and is VERY low in CALORIES. There are many ways pumpkins can be incorporated in your diet, including DESSERTS ! So cook it up and eat it )))
 
 Ingredients:
  • 2 cups all purpose-flour
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1 tsp. ground cinnamon
  • pinch of salt
  • 1 pack vanilla
  • 2 cups granulated sugar
  • 120 gr. butter softened
  • 1 cup pumpkin puree
  • 1 large egg
Preparation:

Preheat oven to 180 C. Grease baking sheets. Combine flour, baking soda, baking powder, cinnamon, pinch of salt in a bowl. In large mixer bowl beat butter and sugar until well blended. Beat in pumpkin, egg and vanilla until smooth. Then mix in flour mixture and drop by tablespoon onto baking sheets. Bake for 15 to 20 minutes. Then cool them for a minute and dress with apple jam (see the recipe in my blog) and walnuts.

Green Smoothie

Hello my friends ! I think we all need some detox after the holiday season, I guess we all put some extra weight which is not good, so I suggest you a very delicious, green smoothie, it's full of vitamins, you stay full of energy, and really takes care of your weight. So here it is:


Ingredients:
  • 1 cup water
  • lettuce 1 head
  • spinach 1/2 head
  • 1 apple
  • 1 pear
  • 1 banana
  • 1 lemon (squeezed)
  • celery 3 stalks
  • cilantro and parsley 1 bunch
  • honey (with your taste)
Preparation:

Add chopped lettuce to blender, pour 1 cup water and blend until smooth. Then add chopped spinach with all the other greens and blend. Core and cut apple and pear into cubes add to blender and blend at high speed. Cut banana pop them into smoothie, add lemon juice and blend. In the end stir in honey with your taste. You're gonna love it ))

Raspberry tart with vanilla crem

Hello my friends ! Today I'll make raspberry tart with vanilla cream.. It's crunchy, sweet, light, delicious and so easy to make.. You can also dress it with other fruits if you don't have raspberries, It's great with strawberries, bananas, cherries, kiwi and orange... It's all up to you, which taste you prefer. Just one bite of this sweet thing will definitely make your day better ) So let's do this.. :)


Ingredients:

  • butter 200-250 gr.
  • sugar 2 tablespoon
  • pinch of salt
  • vinegar 1 tablespoon
  • cold (very cold) water 2 tablespoon
  • vanilla 1 pack
  • flour 250 gr.
Cream:

  • flour 1 cup
  • sugar 1/2 cups
  • milk (or water) 1 liter
  • vanilla 1/2 pack
  • butter 200-250 gr.


Preparation:

To make the dough by hand, cut the butter into small cubes, and pop them into big bowl, stir in 2 tablespoon sugar, pinch of salt, 1 tablespoon vinegar, 2 tablespoon cold water, vanilla and flour. Mix with hands until it pulls together. Use the dough immediately, or wrap in plastic wrap and refrigerate until well chilled, about 30 minutes.
Meanwhile let's make vanilla cream. Mix together flour, sugar and vanilla in a big saucepan, stir and add slowly hot milk or water. Cook over low heat stirring constantly, until mixture thickens and comes to a boil, 15-20 minutes. Boil and stir 1 minute. Remove from heat immediately.
Cool quickly. Set pan in larger pan of ice water. Stir occasionally and gently for a few minutes to hasten cooling. Mix butter in the bowl, add vanilla and cream and continue to beat on a medium speed, then refrigerate until we bake tart.
Now take dough from the fridge. Heat the oven to 180 C and arrange a rack in the middle. Sprinkle the dough over the bottom of a tart pan with a removable bottom. Using your fingers, evenly press the dough into the bottom and up the sides of the pan, prick it all over with a fork and bake until golden brown, about 20-25 minutes. Remove from oven and cool completely before filling and removing from the pan.
After cooling remove it from the pan. Add some raspberries, then fill in with vanilla cream and completely cover with raspberries.

Chinese chicken with peanuts

Hello my friends ! Let' move to Asia for a while, today we're gonna make Chinese chicken with peanuts. Chinese cuisine is one of my favorite and I intend on learning more about it's special recipes. It's full of remarkable tastes that leaves you speechless... Mmm how much I love their distinctive sauces, I can never stop talking about it )))) So if you are Chinese cuisine lover like me, let's do this together. ))

Ingredients:

  • Chicken breast 500 gr.
  • rice wine (or dry sherry) 1 tablespoon
  • soy sauce 1 tablespoon
  • maize flour 1 tablespoon
  • pinch of salt
  • ginger 1 slice (5 cm)
  • celery 1 branch
  • 2 whole scallions thinly sliced
  • garlic 2 cloves
  • sichuan pepper 1 teaspoon
  • red chilly 2 pieces
  • salt
  • vegetable oil 100 ml.
  • peanut 120 gr. (unsalted dry-roasted)
Sauce:

  • chicken stock 200 ml.
  • soy sauce 10-11 tablespoon
  • sugar 1 tablespoon
  • squeezed lemon 1/2
  • maize flour 1 tablespoon
  • parsley for dressing


Preparation:

Wash the chicken and cut into small cubes. Place in a small dish and put aside. In a bowl whisk together 1 tablespoon rice wine, 1 tablespoon soy sauce, 1 tablespoon maize flour and pinch of salt. Pour the marinade ingredients to chicken cubes, mix well wrap in plastic and pop into the fridge for 30 minutes.
Peel and thinly slice garlic and ginger, then thinly chop washed scallions and celery and put aside. Pound sichuan pepper into pieces. Snip chilies in half or into sections, discarding their seeds and mix with sichuan perpper.
Heat a wok or a deep pan over a high flame. Add oil, chilies and sichuan pepper and stir-fry briefly until chilies are darkening but not burned. then take them from the wok and put aside.
Lightly roast peanut in pepper flavored oil in the same wok, Take them and put aside. In the same wok pop chicken cubes roast on a high heat and put aside. Take the oil from the wok, leave only 2-3 tablespoons and add ginger, garlic and scallions to the wok, continue to stir-fry until they are fragrant then add chicken cubes and stir in sichuan peppers and chilies.
Mix together 200 ml. chicken stock, 1 tablespoon soy sauce, 1 tablespoon sugar, 1/2 squeezed lemon, 1 tablespoon maize flour, stir and pour on prepared chicken in the wok. Stir on a medium heat until it's cooked (about 1 minute) test one of the larger pieces to make sure. As soon as the sauce has become thick and shiny, add peanuts, stir them in and serve.

Kharcho (Georgian beef-walnut soup)

Hello my friends ! Today I'm gonna teach you how to make Georgian national dish called kharcho, trust me it doesn't taste as it sounds ))))) usually we serve it with millet (ghomi). I cook it in my own way, the way it tastes good for me. Trust me you will like it. I served it to my guests yesterday and they were fascinated. So if you are ready, let's start.

Ingredients:
  • beef 500 gr.
  • onion 1 medium
  • walnuts 200 gr.
  • garlic 2 cloves
  • kharchos suneli half teaspoon
  • tomato paste 1 teaspoon
  • salt
  • butter 50 gr.
  • oil
  • vinegar 1 tablespoon
  • tkemali 1 teaspoon
  • flour half tablespoon


Preparation:

Wash the beef, cut them into peaces (cubes) put them into a medium pot and boil. Change the water, remove meat broth and boil again. When the meat is cooked roast it on the big deep pan with butter and oil on a medium heat, then cut the onion as small as you can and roast them with meat, when the meat and onion change color add tomato pasta, season with salt stir in flour and put the pan aside. Meanwhile put walnut, garlic, kharchos suneli and salt in blender, add at least one cup of hot water (it shouldn't be thick) add vinegar and tkemali and taste. Add this walnut mixture to the meat and stir on a low heat until flour is cooked, check the taste if salt is well seasoned. Then put it in a deep plate and serve with ghomi, or if you like with bread and a good red wine.

Tiramisu

Good morning my friends ! Guess what I've prepared for you today. It's the most delicious Italian dessert, one and only tiramisu <3 It's very easy to make and it doesn't need baking. I made it last night because you have to keep it in the fridge at least 5 hours, it's better if all night. Now it's cold and soft and yammy... It's Christmas so be jolly, have fun and make tiramisu... Merry Christmas !


Ingredients:

  • mascarpone 500 gr.
  • cream (35%) 500 ml.
  • sugar 150 gr.
  • egg yolks 5
  • cocoa 4 tablespoon
  • brandy 40 ml.
  • espresso 300 ml.
  • package of ladyfinger cookies  400 gr.


Preparation:

In a small bowl combine coffee and brandy. In a medium bowl whisk together egg yolks and sugar until well blended. In a medium bowl beat cream, add mascarpone and then gently whisk into yolk mixture until smooth. Drizzle ladyfingers with coffee mixture. Arrange half of soaked ladyfingers in the bottom of the dish. Spread half of mascarpone mixture over ladyfingers. Repeat layers and sprinkle with cocoa. Cover and refrigirate at least 5 hours, until set.

Grandma's apple jam

Good morning everybody ! It's so cold outside, but it feels so good <3 Let's list things why we love winter so much.. Holiday, Christmas and New Year, snow and presents, hot tea, big sweaters, cozy nights, snuggling in front of the fire.. Oh, how i love this time of the year. Today I'm gonna teach you how to make the best apple jam in the world. It's my grandma's recipe, she taught me few day ago and I'm totally in love with it )) So here it is :


Ingredients:


  • 1 kg. apple (antonovka)
  • Sugar 3 cups
  • vanilla 1 pack
  • lemon zest
  • cinnamon 1 teaspoon
  • dry pectin 1 teaspoon


Preparation:

Peel and core the apples, cut them into small cubes and put them into big pot. Add 1 cup of water and boil on a low heat. (don't forget to stir with wooden spoon). Continue to cook until apples are translucent and softened, about 40 minutes. Some apples will hold their shape so you can squash them with a masher. After the water is evaporated stir in sugar, lemon zest, vanilla, cinnamon, dry pectin and remove from the heat, cool for 20 minutes, then pour into a glass jar or a container, keep them in the fridge. Hope you will love it as much as I do.

Molten Chocolate Cake

Hello my friends, good day to make something very delicious, it's Christmas time so don't count calories !! We will make some detox after holidays. ))

Today I'm gonna make one of my favorite molten chocolate cake and trust me you'll love it. It's hot, soft, both sweet and bitter...Add some ice-cream on top and there you are, in heaven )) So let's get started.. ))

Ingredients:


  • unsalted butter 110 gr.
  • dark chocolate 170 gr.
  • 2 egg
  • 2 egg yolk
  • pinch of salt
  • 2 tbsp all-purpose flour 


Preparation:

Preheat oven 230°. Melt the chocolate and butter in a double boiler. In a medium bowl, beat eggs with egg yolks, add sugar and salt and stir until smooth. Whisk the chocolate quickly into the egg mixture along with the flour. Spoon the batter into the preheated ramekins and bake for 7-8 minutes, until the sides of the cakes are firm and the centers are soft. Let the cakes cool in the ramekins for 1 minute, then carefully turn each one over on the plate, put vanilla ice-cream aside and serve immediately.

Christmas sweets

Gozinayi (Honey walnuts)

Chirstmas and New Years spirit is in the air. Christmas carols, decorated trees, snow, presents and delicious smell of grandmas food .... OMG I can't explain how I love this season. You get a chance to experiment with so many delicious food. And the most important the whole family gets together and you can bring happiness not only to yourself, which is a bit selfish (but who cares) but to many other people. So I decided to write about traditional delight which might be unknown for my foreign follower but very typical to Georgian Camarades :)

Gozinayi is Georgian national sweet delight which is prepared for New Year and Christmas Eve. If you love honey and walnut, this will definitely meet your expectations.


Ingredients:

  • Honey 1 cup
  • Sugar 1 tbsp.
  • Walnuts 600 gr.


Preparation:

Chop the walnuts into small pieces. Heat the pan and fry walnuts until it changes color. Boil honey until it makes bubbles and add walnuts and sugar, stir with wooden spoon for 5-7 minutes. Then evenly roll it with a roller (wet the roller with water not to stick) on a wooden board. Remember cut it until it is hot, otherwise you are a bit screwed as it gets pretty hard.

Bonjour tout le monde, my name is Mariam, I’m 22 and I love cooking. My sister inspired me to start this blog because she thinks I have to share with my cooking experience with you this way, rather than just posting delicious photos on instagram day by day. I took her advise and VOILA, Welcome on my Cherryspot !


Things with me and kitchen started 6 years ago when I was 16. My first try was a Chinese Cake with cream and fruits. I remember being nervous when I served it to my family members. To my great surprise they liked it. Oh, those comments about how delicious it  was ! It was amazing and since than, I am like poisoned.

Whenever I am happy or sad, I can always make my day better by cooking. Call it a hobby, a gambling, or the sweetest thing I can do, but this process simply astonishes me. And than of course, I love to eat.

I live in Tbilisi, Georgia a little country with mountains and sea. It is Caucasus region, with one half on Europe and another on Asia. Culture is rich and diverse. Cuisine is super delicious with its significant traits. I will also be happy to share some receipts of my homemade national dishes time by time.

I believe patisseries is the best thing on earth worth living for, although I have my own concerns with calories and weigh time by time. Oh how I wish I could eat and eat and eat without gaining weigh. But we have to face it girls, looks in those skinny jeans are not worth rejecting a single bite of cherry pie with a spoon of vanilla ice-cream on it, and you know what I mean.
